New York Steak with Chimichurri and Pickled Onions

Ingredients: 

STEAK
1 serving New York Steak
Salt and pepper to taste

CHIMICHURRI
1 bunch cilantro
1 bunch parsley
1 teaspoon minced garlic
Juice from one lime
1 jalapeno
1 cup canola oil
Salt and Pepper to taste

PICKLED ONION
1 cup red onion
1 cup white vinegar
1/2 cup sugar

Method: 

CHIMICHURRI
Place all ingredients, except oil and seasonings, in food processor. Only use the jalapeno seeds if you want extra spice. Drizzle in the oil until desired consistency is reached. Season with salt and pepper.

PICKLED ONION
Bring the vinegar and sugar to a boil together. Julienne the onion and pour the boiling mixture over the onions, let cool for 2 hours.

STEAK
Season the New York Steak with salt and pepper. Sear hard on both sides and finish in the oven at 350 degrees for about 8-10 minutes. Slice steak thinly and fan out on plate. Top with a good amount of chimichurri and pickled onions.
