The Copper River Salmon season opened today. That means we’ll have some fresh fish on site by end of week. I thought I’d share some thoughts on the Salmon before it’s arrival. The Copper River Salmon comes in every subspecies as most river systems in Alaska.
King Salmon or (Chinook)
Sockeye Salmon or (Red Salmon)
Silver Salmon or (Coho)
Keta Salmon or (Chum)
Pink Salmon or (Cat Food)
The number one subspecies, in our opinion, is the King or (Chinook) Salmon; this has a really nice fat content that gives it a “creamy, mild flavor”. The fish are traditionally large, averaging over 30lbs each. Many that we receive during the short Copper River season are over 50lbs. When comparing Copper River King to the other subspecies of salmon, our motto is “they don’t call it the King for nothing”
At Newport Avenue Market, we feature Copper River King Salmon, other stores will likely focus on Sockeye Salmon as it’s less expensive (due to inferior quality). While we will “dabble” in Sockeye Salmon, our main feature is always the “King”. Why? Because that’s what you, our customers, want and expect from us.
