Pesto Chicken Penne

Ingredients
6 8-ounce cubed chicken breasts 2 tablespoons clarified butter or olive oil 1/2 cup pesto sauce (pre-made works great) 1/4 cup sun-dried tomatoes 6-8 rings of red onion 1/2 cup sliced mushrooms 1 teaspoon minced garlic 1 1/2 cups heavy whipping cream 1/2 cup white wine 2 tablespoons parmesan cheese 1 tablespoon chopped parsley 10-12 ounces cooked penne pasta Dash salt and pepper
Method
- In warm saucepan, add clarified butter and chicken, then partially brown. Add mushrooms, onion rings, and garlic.
- Deglaze the pan with the white wine and reduce by half.
- Add the pesto mix, then the heavy cream. Reduce cream (cook it down) until almost thick and add the sun-dried tomatoes, salt and pepper. Cook until cream is thick and toss with the penne pasta.
- Garnish with parmesan cheese and chopped parsley.
