Stuffed Halibut

Ingredients
DISH 4 6-8 ounce halibut filets 1 12-ounce tub ricotta cheese 1 bunch spinach, cleaned and washed 1/2 cup sun-dried tomatoes 1 cup yellow onion, diced 1 teaspoon minced garlic 1/2 cup white wine 1/2 cup water 1 tablespoon butter
GARLIC CREAM SAUCE 1 cup heavy whipping cream 1 teaspoon minced garlic 1/4 cup white wine 1 teaspoon butter Dash salt and pepper
Method
- Preheat oven to 400°.
- In medium saucepan add butter, spinach, onion, sun-dried tomatoes and garlic. Cook until the spinach is fully wilted and the onions are translucent. Remove from heat and place in bowl. Fold ricotta cheese into spinach mixture.
- Cut small opening on the side of the halibut, be careful not to cut through the meat, and stuff the opening with the spinach mix. Place in pie pan with water and wine, and bake for 12-15 minutes.
- Garlic Cream Sauce- In a medium sauce pan add butter and garlic. Sweat garlic for 15-20 seconds.
- Deglaze the pan with the white wine and reduce by half. Add heavy cream, salt and pepper. Reduce cream until sauce is thick.
- Top the halibut with the sauce.
