Ingredients
1 medium portabella mushroom
1/3 cup red pepper, diced
1/3 cup green pepper, diced
1/3 cup yellow pepper, diced
3-4 strips smoked bacon
1/2 cup diced yellow onion
3/4 cup gorgonzola cheese
2 tablespoons butter
Method
Preheat oven to broil. In medium saucepan, add 1 tablespoon butter and sauté the mushroom until tender. Set aside.
Cook bacon, drain and chop.
In same pan add remaining butter, peppers, onion and bacon. Cook until the veggies are tender or the onions are translucent.
Place the mushroom on a small baking sheet or pie pan and top with bacon and pepper mix, then top with gorgonzola cheese. Broil in oven until cheese is brown. Top with fresh chopped parsley.
