Ingredients
½ cup olive oil (Pomace)
1 Tbsp. fresh wasabi
¼ cup Sterling cider vinegar
2 Tbsp. lemon juice (fresh squeezed with pulp)
2 Tbsp. lime juice (fresh squeezed with pulp)
1 Tbsp. Red Misopate
1 tsp. fresh garlic (weight, hand chopped)
1 oz. Roland ginger in syrup or crystallized ginger (weight, sliced)
1 Tbsp. granulated sugar
3 Tbsp. (volume) Gulden's mustard
¼ cup vegetable oil
2 Tbsp. cilantro (medium chopped) 1 tsp. chives
Procedure
Add first 10 ingredients in Food processor.
Slowly (over 15-20 seconds) pour in vegetable oil with food processor running. Add cilantro, chive and black pepper. Briefly process and remove.
Makes 6 1/2 cups.
