Apple Compote
Ingredients:
2 diced red apples
2 diced pear (D Anjou or Bosch)
½ C dried currants (can substitute with other dried fruit)
1 small yellow onion chopped
½ C brown sugar
1 tsp yellow mustard seed
1 Tbsp fresh grated ginger
Pinch of salt
¼ C rice wine vinegar (unseasoned)
¼ C apple cider
Pinch of dried chili flakes
1 C reduced beef broth (demi)
Procedure:
Combine all ingredients together in a pot. Cook until fruit has
softened and juices have been reduced. Remove from heat and allow
to cool. To serve, reheat compote in a pot with reduced beef
broth.
