Carciofi Fritti/ Fried Artichoke Hearts
Ingredients for 4 people:
10 Baby Artichokes
2 Lemons
½ Half Cup Beer
3 Cups of Water
2 Cups of Flour
Salt
3 Tablespoon Extra Virgin Olive Oil
Sunflower Seed Oil of Canola Oil
Procedure:
1: In a bowl mix 1 Pound of flour with the water. Mix the batter until
you obtain a creamy smooth texture, add two tablespoon of extra virgin
olive oil, salt and half cup of beer. Mix all the ingredients and put
the bowl in the refrigerator.
2: Clean the artichokes by removing the tough leaves until you reach
the heart and cut it in for pieces. Remove the fibers in the center.
Put the artichokes in a bowl with water and the juice of two lemons.
3: In a frying pan heat sunflower seed oil until it reaches 375
Fahrenheit put the artichokes in the batter bowl and then put them in
the frying pan. Cooking time has to be fast, artichokes have to be
crispy outside and tender inside.
4: Dry off oil with paper and serve with a sprinkle of salt.
