Pink Peppercorns

From a small mastic-tree, these little berries are not a proper member of the pepper family. The green berries grow in tiny clusters of white flowers that form in autumn, and become bright red before harvesting. Their name comes from their similarity to true peppercorns in both size and shape.

History
The botanical name for pink peppercorns dates to a reference to the ancient aromatic trees shinos (the mastic tree) and terebinthos (the terpentine tree).

Today's gourmet cooks aren't the first to use pink peppercorns in the kitchen. They are found in the cookbooks of Apicius, an ancient (and extravagant) Roman cook who wrote cookbooks advocating the use of complicated dishes with rare ingredients. In modern times, it wasn't until the 1900s that pink peppercorns were exported s a spice.

Today pink peppercorns are grown in Reunion, France, Indonesia, the West Indies and Thailand, though the largest supplier is the state of Espirito Santa in Brazil. It's also known as the Christmas berry, the Brazilian pepper tree, pepper rose, and the Florida holly. (It grows wild today in Florida.) Another species of pink peppercorn, sometimes grown as an ornamental, is Schinus molle . It's mainly produced in Peru and isn't often exported today.
